Hi Everyone!
This past week at the meetings we discussed how eating the same old, same old foods can be boring and since WW is a lifestyle, eating the same old, same old foods are not sustainable. I went to WW.com looking for a breakfast idea for today and decided upon Sweet Potato Pancakes. They're easy, you probably have the ingredients in your kitchen and they don't take too long to make.
Hope you'll enjoy it.
SWEET POTATO PANCAKES
2 teaspoons canola oil
1 (3/4lb.) sweet potato, peeled and shredded.
2 scallions, finely chopped
1 large egg,lightly beaten
1 tablespoon flour
1/4 teaspoon salt (optional)
Place oven rack on lowest rung and preheat your oven to 400 degrees. Brush a large rimmed baking pan with oil.
Combine potato, scallions, egg, flour and salt in large bowl; mix well. Place potato mixture by packed 1/4 cup cupfuls two inches apart on prepared baking sheet, making a total of 8 pancakes. Press each into a three inch circle.
Bake until the bottoms are browned, about 20 minutes. Spray pancakes lightly with Pam, gently turn. Bake until cooked through and browned, about 10 minutes longer.

Pancakes were tasty but a bit dry. I"m thinking possibly next time to use egg substitute in place of of the egg. I've read that it won't change the taste (like applesauce or pumpkin might) yet would give moisture and I use egg substitute in my banana bread and it's moist.
If you try it with the suggestions, would you drop us a line and let us know how it turned out.
Have a great day!!
