HI Everyone!
My apologies to anyone who tried to access my blog and they were unsuccessful. There was a bit of technical difficulty which has been resolved. Here are the recipes I promised to my Tues. night WW class and to others:

Bok Choy Wrap

1 bunch bok choy
1/2 tbsp. olive oil
1/2 cup 1% cottage cheese
1/2 cup diced tomatoes and red onions
1/3 cup diced avocado
3 oz. cooked chicken breast, shredded (baked or ritisserie)

Preheat the oven to 375 degrees. Cut the green tops off the bok choy (and save the rest for a soup or stir fry). Sprinkle with olive oil. Flattten the leaves out on parchment paper. Bake for 10 minutes, remove from the oven and spread each leaf with a spoonful of cottage cheese, tomatoes, onions, avocado and a few handfuls of the chicken. (If you don't have time to bake the wraps, they can be served without cooking-except chicken must be cooked).
5-6 wraps-2pts each
7or more wraps 1 pt. each
Points for wrap will depend on size of bok choy purchased.

Carmelized Sweet Potatoes

Take as many sweet potatoes as desired and scrub. Preheat oven to 350 degrees. Place clean sweet potatoes on a cookie sheet lined with aluminum foil. Put potatoes in oven and bake for 3 hours. Take off cookie sheet and place on plate to cool and enjoy.
